Summer Wine Tasting at Big Canoe

On Wednesday, July 21, the Clubhouse at Lake Sconti will host a Summer Wine Tasting on the
Sunset Veranda. Thomas Smith, Beverage Supervisor, and Chef Tulio have paired a
delicious summer dinner and wine event perfect for this summer season.
During the welcoming reception, guests will be introduced to Gruet Blanc de Noirs Sparkling
Champagne. According to the wine maker, “The rich and toasty character of our Blanc de Noirs
is balanced and superb. Aged for two-year minimum, the palate is developed and shows rich
complex flavors. The amazing berries aromas and the creamy texture play a leading role and
create a great finesse.”
Chef’s first course of bronzed seared fresh sea scallops with a tequila lime sauce will be perfectly
paired with Burgans Albarino. The Wine Advocate describes, “The 2007 Burgans Albarino is
light gold-colored with a sprightly nose of mineral, spring flowers, and lemon peel. Ripe,
balanced, and concentrated, this is an ideal match for flaky fish courses. “
Baby mixed greens tossed with honey cured sweetened dried cranberries, and yellow pear
tomatoes served with a cilantro honey lime dressing create the second course for dinner. To
compliment the summer salad, a Pinot Noir from Fleur De California will be served slightly
chilled. The winery portrays the Pinot Noir as “Fleur de California is our bright, fresh, charming,
and flavorful Pinot Noir from Carneros. The brilliant ruby color sets the stage for aromas of ripe
cherry and cranberry, with hints of white pepper and nutmeg. While dominated by effusive fruit
flavor, the wine is soft, supple and rich in the mouth.”
The main course couples Black Angus beef tenderloin with Maine lobster cream sauce, spaghetti
squash and brocollini, and is served with Mara Syrage Lot #7. “Syrage defines the essence of
two varieties but one wine and the best of Hermitage and Meritage. The Mara Wine Group
created Syrage Lot #7 to go beyond the one grape/one wine philosophy. This allows our
winemaker the latitude to build intense wines of balance to meet the consumer’s desires. Syrah is
our pedigree, contributing balance with 18 months of oak aging from our vineyard in the Sierra
Foothills. By using the Queen of Bordeaux grapes, Merlot, also from the Sierra Foothills, we
added velvet and grace (forget Miles) with her Bordeaux origins. Also, 18 months in small
French barrels. While the label says California, it is all Sierra Foothills. This area is renowned
for its cool climate Rhones and early, ripe, intense and balanced Bordeaux reds which have
attracted collectors worldwide.” – Winery Website
For the perfect summer dessert, Chef has created a delectable raspberry crème Brulee with the
finishing touches of a Moscato d’ Asti Biancospino. This is a charming wine with a lot of ripe
Muscat fruit, a little sparkle from the bubbles and low alcohol. It’s a wine that will be perfect
with the right dessert or as an appetizer wine.
